This soup is a hearty one, and it's long list makes it that way.

  • Extra virgin olive oil 2 tablespoons
  • 2 cloves of garlic, chopped
  • Half a cup of canned tomatoes
  • Half a yellow onion, diced
  • 1/2 carrot, diced
  • 1 tbsp basil pesto
  • 2 cups vegetable stock
  • 1 cup fresh spinach leaves
  • Salt and black pepper
  • Fresh thyme leaves, 1 tbsp
  • 6 oz. Tortellini of choice

Instrucciones

Boil

Tortellini should be cooked in salted boiling water, according to package instructions. Drain and set aside.

Cook

In a large pot, heat the olive oil on MEDIUM. Add the carrots, onions and thyme. Salt and pepper the vegetables and cook them for 5 minutes until they begin to soften.

Simmer

Add the canned tomatoes and vegetable broth, along with the garlic minced, to the pot. Simmer for 30 minutes until all the vegetables are soft and the liquid has reduced.

Variations

  • Add some fresh herbs and lemon juice to the soup for a refreshing touch.
  • If you're looking to try out other vegetables, I suggest trying mushrooms, celery diced, fennel or bell peppers.
  • To reduce the fat and calories, I substituted broth for cream. If you want a thicker, creamier soup, add some heavy cream.

Serving Suggestions

  • The crusty bread goes well with soups, pastas and both.
  • This soup is great with a lentils salad. It's a nice contrast with the pasta.
  • Antipastos (marinated meats, cheeses, artichokes, and cured meats) are a delicious way to introduce this main dish.

Is it suitable for vegetarians?

You can, provided you only use tortellini that have a vegetarian filling. Your broth should also be made of vegetables.

Can you add some extra toppings to this soup?

Can I make tortellini as a vegan soup?

The main thing is to keep them separated or add them right before serving the soup.

I don't own basil pesto. Can I substitute another type of pesto?

Pesto made with roasted red peppers, sun-dried tomatoes, or cilantro can be substituted. You can skip it or adjust the seasonings by adding extra garlic and Italian seasoning blend.

Can I spice up the tortellini?

Add red pepper flakes, or jalapeno chopped peppers. What a great kick!

Tortellini Soup: How to store it

Refrigerate the soup after it has cooled. Enjoy it up to 3 days. To extend the shelf life, cook the tortellini separately and then add them when you eat.

Skip the tortellini and spinach if you are freezing. This will freeze for up to three months. Defrost overnight and reheat. Add cooked tortellini, and spinach. Good food!
